Countertop suggestion for a Restaurant

I am renovating a restaurant and needed advice for the countertop.
I want a non porous and water resistant type natural stone.
Took a look at granite and marble. Just confused between these 2 stones.
Help me out here please

The granite tastes good, but only with a lot of ketchup. Marble leaves an aftertaste, not that it is a bad aftertaste, but it lasts two lifetimes.

Did some more research. Read about engineered stones ie quartz . They are cheaper than natural stones and they also require less maintenance.
They come in the same designs as marble and granite provide.
