HI RICK ENJOY YOUR COLUMN. WANT A PIECE OF PIE? BAKERS SQUARE HAS ALL KINDS OF PIES AND THEY CHANGE ALL THE TIME FOR SPECIAL OCCASIONS. THE OMEGA ON RT. 59 NAPERVILLE HAS GOOD PIES ALSO THE ONE ON OGDEN IN DOWNER GRAVE. THAT IS MY FAVORITE AND NOTHING IS BETTER THAN A HOMEMADE ONE. IF YOU FIND A RESTURANT THAT IS OPENED FOR EARLY BREAKFAST AND TILL LATE NIGHT RUN BY A GREEK YOU WILL FIND A GOOD PIE.

i will take a good piece of pie over cake or cookies (my other favorite goodies) any day.

key lime and pumpkin are tops on my list. a sweet-tart apple with a lattice crust comes in third.

For many years I have held a prescription to the Natural History magazine and unfortunately witnessed decline in its content, including some of its former popular departments. For a time there appeared monthly articles on foods of the world by culinary writer, Raymond Skolov, which often included recipes along with origins and history. Apple pie was featured in one issue and after trying it I became so interested in apples and apple pie I planted a number of apple tree varieties. The article presented a great apple pie recipe from the kitchen of a lady by the name of Wilma Priebe(sp?)who, I believe, won the Iowa State Fair Apple Pie first prize more than once. Though many years old now, I've continued to employ Wilma's famed recipe. It is quite simple and the best.

I think the best pie I've ever tasted in my life is from Billyboy's blueberry Barn in Indiana. Their blueberry pies are the BEST! They use fresh blueberries that have just been hand picked, compared to others that use filler or frozen blueberries or just the juice. Their pies are HUGE as well as TASTY! Unfortunately, they're only open in the summer. Forget about baking it yourself, unless you want to spend $10 for the same amount of blueberry and half a day preparing it in the kitchen. Make sure you call before you head up there before they're sold out because I made a special trip there in the past and they're all sold out. www.billyboysblueberrybarn.com

I remember that recipe. It WAS the best. Used lard in the crust. Can you post the recipe? I can't seem to find it.
