Persimmon pudding,My grandma use to make it...Do you know smoking pipes are made from that wood? We waited till they fell off the tree,then picked them up,if you pull one off the tree and eat it ,your mouth will be bitter for a while. Always heard you suppose to wait till the first frost,to gather them up,can't remember. Don

The fruit is sticky like and thick, more so than apple butter, when you finish processing it. I found the best way is to put them in a large bowl and carefully rinse, over and over, drain. I have a little contraption I can't remember the name of, but, it is the size of a cup with holes all over in it, with a double attached handle, and a round flat piece that goes into the cup. I put about 8 of the fruit into it, and press the handle down, scrape the fruit off the outside into another dish. It is easier than it looks. There are a lot of seeds in a little persimmon. The press I have is stainless steel. I fill freezer containers, about a pint size, and freeze. They keep for a long time. I don't keep anything frozen past a couple years. Don't know how good after that. I tried several ways to strain before this one. It is the best way for me. If you have persimmon trees and want to do this, go to Ace Hardware and describe the tool, they either have or order anything. Unless WalMart has them. I imagine you can find lots of recipes on the internet for persimmons, if not, I can post some. Hope this was not TMI. Too much info!

Oh Yes,I watch msnbc,Cnn,situation room with Wolf,I rarely watch Fox.. I do like old larry King,I miss Peter Jennings.. And what use to be my favorite was Good morning America,I got to do a interview with them once,in regards to What the American Dream means to our young people.. And what is happening today were some of my points.. Very interresting interview. What is happening US wide ,started up here first,big lay offs,car sales down. . Don

Don It is ok to keep the processed persimmons in the refrigetator for a few days, like any other fruit, but I wouldn't keep the unprocessed ones in fridge for long. I might add, when we came here, I had never seen a persimmon tree, let alone the fruit, and didn't have a computer, so had to learn all that I am doing by trial and error. I went to Mt. Home, and found a persimmon pamphlet, and that is where I got my recipes. I started out making persimmon Cakes in a Jar, little too strong and heavy so I added half apple sauce, this from the recipe Applesause Cake in a Jar. That was good. Then I found the recipe for the fruitcake, prob. in that little recipe book. The cookies are good, also, we were not too crazy about the pudding. Maybe some have a better recipe than the one in the little pamphlet.

Has any one ,ever watched a possum that ate persimmons seeds?? They will eat those seeds,and got potty for at least 30 minutes. True story,but the fruit does not bother us. Do not try and catch one,with your hands,they could bite it off. All they are is one big grease ball,if you do not think so,try cooking one. Some people like them,I do not.. Don

Won't they rot if they lay there that long? I know nothing about persimmons.

It is best if you pick them up as soon as you see them fall, and if there are enough that are not mashed, just pull off the stem as you pick them up and when you get what you want, take them in and follow the rest of my instructions above, or find some somewhere else. Your mom prob. knows. I have tried to put on here, exactly how I do it, right down to the press I use. The persimmons will be golden in color and no wrinkles if they are fresh. When they wrinkle, meaning dry out, or turn dark, I don't use them. If you can't find recipes on the computer, let me know, I have some. You can prob. find instructions from beginning to end, there, also...I just learned from doing. There will be black specks through the fruit, doesn't hurt, you could prob. squeeze the fruit in cheese cloth and get the clear fruit. I don't do that.
