Hi Lisa and thank you, I use to make a cheese sauce but I find this method some much easier and flavorful. You will have adjust ingredients to what ever proportion you need so I will just give you the ingredients and method.
Boiled and drained macaroni
3 different shredded cheeses-1/2part cheddar, 1/4part swiss and 1/4part blue cheese (or your own 3 choices of tangy cheeses)
milk
butter
flour(make sure to sprinkle in so no lumps)
salt and pepper
Mix all ingredients in large bowl then spoon into each little ramekin for individual servings then sprinkle with more cheddar cracker crumbs or bacon crumbs and bake ramekins on cookie sheet at 350 for 30 minutes.
Thanks Capree.....next time I use it..I'll let you know how it turns out..
*I never used blue cheese (or even 3)...*

Yes like me know the out-come. Blue cheese is pretty strong by itself but it works well in mac and cheese.
