Chicken Parmesan Recipe

Here is a nice Recipe for Chicken Parmesan as I am sure you all like. Enjoy!

4 boneless chicken breasts, pounded to 1/2 inch thickness
1 egg
1/2 cup milk
seasoned bread crumbs
2 to 3 tablespoons olive oil
8 slices mozzarella cheese, or more
1 jar (16 oz) spaghetti sauce
Parmesan cheese
Preparation:

Whisk together the egg and milk. Dip the chicken breasts in milk and egg mixture and then in bread crumbs. Heat olive oil in a large skillet over medium-high heat. Brown the chicken in the hot oil on both sides until golden, about 3 to 4 minutes on each side. Set chicken in a baking dish.
Slice 8 pieces of mozzarella cheese and put two on each chicken breast. Pour 1 jar of your favorite spaghetti sauce over all. Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly. Serve with spaghetti, garlic bread and a nice green salad.

Rhubarb Crisp Recipe

Ingredients-
3 cups rhubarb, cut up
1 cup sugar
1 egg, beaten
2 tablespoons flour
1/4 teaspoon mace
1/4 cup butter or 1/4 cup margarine
1/3 cup brown sugar
2/3 cup flour
Directions:

Combine the rhubarb, one cup sugar, egg, 2 tablespoons flour and mace and spread into a deep pie plate.

Combine the remaining ingredients to make a crumbly mixture.

Cover the rhubarb with this mixture.

Bake at 375 F for about a half hour, or until rhubarb is tender.

Serve warm with cream.

Sweet Potato Casserole

Recipe for Sweet Potato Casserole:

4 1/2 cups sweet potatoes, cooked and mashed
1/2 cup unsalted butter, melted
1/3 cup milk
1 cup white sugar
1/2 teaspoon vanilla extract
2 eggs, slightly beaten
1 cup light brown sugar
1/2 cup all-purpose flour
1/3 cup butter
1 cup chopped pecans
0.5 (8 ounce) bag mini marshmallows
Directions:

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.

In a large bowl, mix together mashed sweet potatoes, 1/2 cup butter, milk, sugar, vanilla extract, and eggs.

Spread sweet potato mixture into the prepared baking dish.

In a small bowl, mix together brown sugar and flour. Cut in 1/3 cup butter until mixture is crumbly, then stir in pecans. Sprinkle pecan mixture over half of the sweet potatoes.

Bake for 25 minutes in the preheated oven.

Add the marshmallows to the sweet potato mixture during the last 5 minutes of baking.

If desired it can be made with just the pecan topping or just the marshmallow topping (just double the amounts).

If making ahead of time bake as directed for 25 minutes, and when about ready to serve warm in oven at 350 for 15 minutes then add marshmallows and bake for another 5 minutes.
