ok I found another chow chow recipe.
I have not made this one myself yet, so you be the judge.

Chow-Chow

12 large green tomatoes
4 large onions
4 green peppers (sweet ones)
1 red pepper (hot one)
1 Tbsp. salt
1 cup sugar
2 cups vinegar
Dash of turmeric

Grind, drain, mix all together, cook it by letting it come to the boiling point.
Seal while hot. Makes approximately 4 pts.

Good, I love them too. I use the same recipe and fry yellow squash and zucchini.

Have you ever had the fried vegies baskets at the fair? Well another thing we do sometimes is slice a few onions thick, take the ends off some green beans, and some brocoli spears and cauliflower, and a few baby carrots as well at the squash and the green tomatoes, and use the same recipe and have just fried vegies and a grilled piece of meat,(chicken is my fav). Makes a great super,... course all that oil cant be good for ya, lol but it's sooooooo tasty. I love the onions........If u have a fry daddy, its great for this.

Tomato Preserves
5 large ripe red or yellow tomatoes (3 lbs)
4 & 1/2 cups sugar
1- 2 1/2 inch cinnamon stick
2 Tablespoons minced fresh ginger root
OR 1 teaspoon ground ginger
2 lemons or limes, thinly sliced
Peel tomatoes and remove core.
Place in a glass or plastic bowl; add sugar and
let stand overnight.
Drain juice into a large heavy cooking pot;
add cinnamon stick and minced ginger root.
Boil rapidly until it thickens, about 20 minutes.
Cut tomatoes into 6 or 8 wedges;
add juice with sliced lemons, cook until mixture thickens and clears, 20 to 30 minutes.
Discard the cinnamon stick.
Pack into hot sterilized jars. Adjust lids. Process in a hot water bath for 20 minutes.
May be kept in refrigerator.
Makes 5 half Pints.

squash and zuchini (sp)

slice both into rings, dredge in an egg wash and then press into flour. Deep fry until golden brown. This one even KIDS love.

NOTE: Add some cornmeal, salt and pepper to the flour mix for a summer treat you'll never forget.

As for Kraut, I might have a recipe somewhere but I remember shredded cabbage, vinegar and only a few pickling spices if you liked it kind of hot. You might could try the ball site (ball canning products)site.

It is good like a jelly.
Eat it on a biscuit.
