Wow, how did I get Oak Ridge, Tennessee for a location? hahaha Had some trouble shooting for the wireless, added a new modem, but I am still in the Fort Knox/Louisville area. Weird.

Looks like betty already posted many that I have so I will post some great recipes I have been copying off FB. Next family potluck get together will have us each bringing one of these to try. Enjoy

Bacon Ranch Foil Packet Potatoes

3 sheets of heavy-duty foil
10-12 baby red potatoes, thinly sliced
6 slices of cooked and crumbled bacon
1 packet ranch dressing mix
Salt and pepper to taste
3 tablespoons butter
Sour cream for serving, if desired

1. Spray each sheet of foil with cooking spray. Top each piece with equal portions of potatoes, bacon, and ranch dressing mix. Add salt and pepper to taste. Add 1 tablespoon of butter to each serving. Wrap securely.

2. Grill for 20 to 30 minutes. Let stand 10 minutes before serving. Serve in foil, topped with sour cream if desired.

Cheesy Baked Dip

8 oz. sour cream
8 oz. cream cheese
16 oz. cheddar cheese, grated (sharp or mild)
4 oz. chopped green chilies
Green onion (suit your own taste)
1 c. chopped ham
1/2 pound chopped bacon
1 round bread loaf, hollowed out

Mix first seven ingredients together and put into the hollowed out bread loaf. Bake at 350 degrees uncovered for one hour. Serve with leftover bread or chips.

Taco Bake

Ingredients:
1 pound ground beef
1 packet taco seasoning
* water as called for on back of seasoning packet
3 large flour tortillas (8-inch size)
1/2 cup Salsa Con Queso
1 1/2-2 cups shredded Mexican cheese blend

Directions:
Brown and crumble ground beef. Drain excess grease.
Add in taco seasoning and water (following directions on back of seasoning packet).

Once the taco meat is ready, turn off heat and add in 1/2 cup salsa con queso.

Give it a good stir until thoroughly combined.
Preheat oven to 350F degrees.

Spray an 8-inch round baking pan with nonstick cooking spray.

Layer the bottom of the pan with a flour tortilla.
Now add about 1/3 of the ground beef taco filling on the the first layer.

Then add 1/3 of the shredded cheese.

Continue until you are done with all the layers: another tortilla, more taco mixture, more cheese.
Bake at 350F degrees for about 15-20 minutes.
Until cheese is melted and edges are slightly golden brown.

Allow to cool for a couple of minutes.
Then slice and serve.

I like mine with some sour cream and diced tomatoes on top.

Popeyes Biscuits (Copycat)

"They taste just like the restaurant. Fluffy and light and so easy to make."

Ingredients
2 cups bisquik baking mix
1/2 cup light sour cream
1/2 cup Sprite

Directions
Mix Bisquick and sour cream with pastry blender.
Stir in Sprite.
Pat lightly on a floured surface.
Cut out biscuits and place 2 inches apart on ungreased cookie sheet at 400°F for 10-12 minutes. Brush with melted butter and enjoy.

Attention shrimp lovers!!

Try this quick way to make fabulous shrimp.

Melt a stick of butter in the pan. Slice one lemon and layer it on top of the butter. Put down fresh shrimp, then sprinkle one pack of dried Italian seasoning. Put in the oven and bake at 350 for 15 min. Best Shrimp you will EVER taste:)

Coconut Pecan Pralines

Ingredients:

2 ½ cups sugar
½ cup evaporated milk
½ cup light corn syrup
½ cup butter or margarine
1 teaspoon vanilla
2-2 ½ cups chopped pecans
2 ½ cups grated coconut

Directions

Mix all ingredients except coconut, vanilla & pecans in large saucepan.

Bring to a rolling boil & boil for 3 minutes.

Remove from heat & add coconut, vanilla & nuts.

Stir by hand 3-4 minutes.

Drop by spoonful onto waxed paper and let harden.

Store pralines in an airtight container.

OMG Crockpot Pecan Pie

Ingredients

1 uncooked piecrust
3 eggs
1 cup sugar
2/3 cup dark Karo syrup
1 cup pecans, broken up
1/2 cup margarine, melted
1 teaspoon vanilla
Directions

Step One

Spray the slow cooker with nonstick cooking spray.
Step Two

Place uncooked piecrust in the slow cooker and press up the edges about 1/2 inch up the sides.
Step Three

In a medium-mixing bowl, stir the remaining ingredients until well mixed. Pour on top of the piecrust.
Step Four

Cover and cook on HIGH for 2 to 3 hours.

I love pecans....enjoyed some Derby Pie last weekend. Yummy.

Pecan Pie Cupcakes

Ingredients:

1 cup chopped pecans
1/2 cup all-purpose flour
1 cup packed brown sugar
2/3 cup butter, melted
2 eggs

Directions:

Preheat oven to 350 degrees.

In a medium bowl, combine all ingredients and mix well.

Spray a miniature muffin tin with non-stick cooking spray.(The spray with flour in it works best!)

Fill each 3/4 full.

Bake in preheated oven for approx 18 minutes.

NOTE: Generously spray your pan with cooking spray with flour. Once they come out of the oven let them cool for one minute then flip them out onto a cooling rack. If they cool in the pan they'll have to be chiseled out.

Also don't fill the pan to the very top, they will overflow if you do.

gizmo, my monster in/out cat went missing this past weekend. well, actually he went out Friday night before the rains came and didn't get back to the house quick enough before it was pouring buckets. so i suppose he just gave up and hunkered down somewhere, which is rare for him because almost always he beats the rain in. i figured all Saturday, that where ever he was, he had decided to stay but when he had not returned by Sunday night i had hubby out looking for him. i even went down to the pound yesterday after work just to make sure someone had not mistaken him for a stray but, as usual...just about the time i really started to panic..... he was waiting for me on the porch when i got home and was very vocal telling me about the rain and has not yet ventured back out yet. i have had a few in the past that disappear for a week or so then show up....but he has always made an everyday appearance. really wish he would just decide to be inside all the time where i can hover over him but you know how it goes.... some birds just wont be caged. if he wants out bad enough he will make your life absolutely miserable till you open the door. i couldn't beg the others out with a dead fish....they like the pampered life too much.

@betty, loved the cat story. I can identify with that one.

Don't think you posted the carpet shampoo, if you did I must of passed it up scrolling through the bs. lol

Carpet Shampoo Solution:

1 cup oxiclean*
1 cup febreeze*
1 cup distilled white vinegar

*The homemade versions work fabulously!

Pour contents into shampooer tub and mix with hot water to fill tub completely. This will not only clean your carpets it will also deodorize. It will smell slightly of vinegar until the carpet is dry.

Be sure to test spot with the solution just to be safe, however this should be safe for ALL carpets.

Nothing like making your own and saving money. I am glad they post these. Probably does a better job too.
