Has anyone here ever worked there? I have some questions about walnuts and I want to ask someone who knows their operation.

Well,I had read that after hulling, nuts should be stored only a couple bags deep so they can cure without molding, but I see photos of stacks of bags of hulled nuts six feet high....Does mold on the shell not hurt the nut?
How long are they cured before being shelled? Do you float test them? Because I notice here at the house that a lot of the floaters (that are supposed to be bad) are good.
Do you soak them before shelling them?
And how the heck can you separate the bits of shell from the bits of nutmeat? I have a hard time doing it, I have no idea how a large scale operation can do it.....
Sorry for all of the questions, but I've got 36 bags of hulled nuts here, and I am trying to find the best way to store them without them going bad, and the best way to prepare them for shelling. I bought a Master Cracker that is especially made for black walnuts, so at least I'm not banging them with a hammer........
Any of your insights would be greatly appreciated.......

Call Hammons Factory and ask them

They consider their procedure to be top secret and proprietary, unfortunately.
