Partners Seek Variance For A Bistro
“Everybody has been very supportive so far”
If Dunkin' Donuts is on the way, can a French bistro be far behind? The planning and zoning commission will hold a public hearing Thursday at 7 p.m. in town hall on a special permit application to open a French bistro and pastry shop in the former Deep River Bakery building at 158 Main St.
The zoning board of appeals last month approved a variance of the town's parking requirements for the proposed restaurant, which would be called du' Glace. The proposed restaurant would be run by three partners - Doug Holt, a West Hartford resident who changed careers from stockbroker to chef several years ago, and William and Jacqueline Von Ahnen, an Ivoryton couple who worked previously as the head chef and pastry chef, respectively, at the Copper Beach Inn in Ivoryton. Holt said Monday that he had worked with the Von Ahnens at the Copper Beach for a time until January 2006, when a change in the menu at the long-running Ivoryton establishment led them to leave to pursue the dream of opening their own restaurant.
