Blue Coast Burrito, a couple of months or so the newspaper had an article. Tony Oliphant is the owner. I have tried Blue Coast before, it was AWFUL. Combine Taco Bell with Subway= BCB

West coast-style Mexican restaurant coming to Cookeville

COOKEVILLE -- The old Pizza Hut building on Jefferson Avenue off of Interstate 40 is now gone, making way for a new restaurant -- Blue Coast Burrito.

Demolition on the building began Monday and was completed quickly. Construction on the new facility should begin in the next few weeks.

"The uniqueness of the freshness of this restaurant is what appealed to me," owner and operator Tony Oliphant said. "I love the concept of the restaurant -- it's all fresh and there's nothing like it in the area."

The freshness, according to Oliphant, is what makes the food so appealing.

"Nothing is processed. Imagine something similar to Subway -- we have hand-cut chicken and steak, La Tinga chicken, fresh made guacamole made daily, and fish tacos, our specialty," he continued. "As you choose what you want, you move down the line and request what you'd like on it."

Blue Coast Burrito, based out of Brentwood, offers West-coast style Mexican food, featuring build-your-own burritos, fish tacos, fresh-made salads and more. A salsa bar will also be available, with unlimited chips.

Oliphant, who has lived in Cookeville for a number of years, was previously in banking. He left banking to venture into entrepreneurship.

"It's been a dream of mine to own my own business," he said.

The new building will have 120 tables -- with a covered patio.

Oliphant is hoping to open the restaurant in October, hiring around 30 full-time and part-time employees. Catering will also be offered once open.

"I am also hoping to open another site within 12 months," he said. That one, he said, will be closer to the hospital and Tech district, whereas this first one will hit Interstate traffic.

There will also be 1,625 square feet of space available next door for rent.

The name, according to the company website, originates from a little stretch of white sand on Highway One from Cabo San Lucas called "Playa Costa Azul," which means "Blue Coast Beach." It is where the Pacific Ocean meets the Gulf of California and is where people from all over gather to eat Baja's famous fish tacos, listen to the rhythms of Mexico and surf some of the best waves in the world.

Other Blue Coast Burrito locations are in Chattanooga, Collierville, Franklin, Hendersonville, Nashville, Memphis, Murfreesboro and Smyrna. There are also locations in Arkansas.

It is definitly a Blue Coast Burrito place where you can make your own burritos. IT is going to be great if they can get good cooks.

Actually J&S Construction Co. is the owner. Oliphant is a percentage based owner/manager.

He was president or vice president of the Clayton Bank branch here in town. His name was also mentioned awhile back in an epic thread on here about swingers lol. Gross, is all I can say.
