If I were him I would have kept the Esicar's sign up too. People still call it Esicar's and I bet Jack didn't mind as long as they continued to do business there.

I hear the health department came in and worked him over really badly. I hear they opened up cases of meat, anything perishables and pored bleach over everything whether it was salvageable or not.
I heard they even broke open BBQ sauce in glass jars with hammers. Just went through destroying everything that wasn't already destroyed.
