Anyone have any good yellow squash recipes you would like to share?

Just slice them up roll in flour and fry. That's the only way that's good.

slice them in half longways. Put a little bit of salt and pepper on them, plenty of butter on top, wrap in aluminum foil, and cook them on the grill. zucchinis are even better cooked this way.

Lightened Squash Casserole
Serves 10-12, 139 calories per serving, Carb 150
3 lb yellow squash
1/2 cup chopped sweet onion
1 1/2 tsp salt, divided
1 cup grated carrots
1 (10 3/4 oz) can reduced-fat cream of chicken soup
1 (8 oz) container light sour cream
1/4 cup chopped fresh chives
1/2 cup crushed cornflakes cereal
2 Tbsp melted butter
1/4 tsp freshly ground pepper

1. Preheat oven to 350 degrees. Cut squah into 1/4 in thick slices; place in a Dutch oven. Add onion, 1 tsp salt, and water to cover. Bring to a boil over med high heat, and cook 5 minutes, drain well, and pat squash dry with paper towels.
2. Stir together grated carrots, next 3 ingredients, and remaining 1/2 tsp salt in a large bowl; fold in squash mixture. Spoon into a lightly greased 2 qt oval baking dish
3. Stir together cornflakes and next 3 ingredients in a small bowl. Sprinkle over squash mixture.
4. Bake at 350 degrees for 30 to 35 minutes or until bubbly and golden brown, shielding with aluminum foil after 20 to 25 minutes to prevent excessive browning, if necessary. Let stand 10 minutes before serving.

I'm okay with carbs, Becky. At my age, I no longer worry about my figure. I tried steaming them tonight with a little bit of butter spray. It turned out pretty darn good!

Slice some yellow squash and zucchini about 1/8 inch thick into a mixing bowl. Chop a tomato or two and add to the squash. Add salt, Italian seasoning, garlic and pepper to taste. Stir so that the seasoning is evenly distributed and pour into a greased casserole dish. Put a generous amount of parmesan cheese on top, cover and bake at 375 degrees until the squash is as tender as you like it. You might want to uncover it during the last 10 minutes of baking to dry it out a little. I'm sorry I don't have a recipe with exact measurements. I just throw stuff together and cook it. You can also make this in a pan on top of the stove if you are in a hurry. Just don't add the cheese until it's done.

Cut up the squash in small pieces, put in frying pan and cover with water. Heat and stir until tender. Take frying pan and empty in compost bin.

Here is an alternative to potato chips to serve with your favorite dip. You can "ruffle" these chips using a crinkle cutter or use a chef's knife for smooth ones:

Cut 2 yellow squash and 2 zucchini into 1/4 in thick rounds. Combine squash, zucchini, 4 cups cold water, and 1/4 tsp salt in a large bowl. Cover and chill 30 minutes; drain and pat dry with paper towels.

My last one today YELLOW SQUASH SALAD

Combine 3 medium-size yellow squash, thinly sliced; 1/2 cp frozen green peas, blanched; 2 Tbsp chopped fresh basil, and 1/4 cup crumbled feta cheese; drizzle with your favorite vinaigrette.

Yellow squash sliced.
Sweet onion.
Sour Cream.
Chives (optional)
Salt and Peppa
Saute onion until just done in butter, add squash - salt as needed. Saute squash until it reaches desired tenderness. Remove from stove and toss in sour cream - stir gently. Sprinkle freshly chopped chives on top. Fabulous!
