Okay, does anyone have any good tomato recipes? Specifically tomato pie? i had a really good one once but lost my recipe. It has been years ago. I downloaded one of the internet and it was okay, but not like the one I remembered.

2 cups baking mix
2/3 cup buttermilk or milk
1 1/4 cups grated Parmesan cheese, divided
2 large tomatoes, seeded and thinly sliced
2 Tbsp all-purpose flour
1 small sweet onion, minced and divided
1/2 cup chopped fresh basil, divided
1/2 teaspoon salt, divided
1/2 teaspoon pepper, divided
3/4 cup creamy mustard-mayonnaise blend
STIR together bakin mix and buttermilk in a medium bowl just until blended; pat into bottom and up sides of a lightly greased 9-inch pieplate.
BAKE at 400 degrees for 7 minutes. Remove from oven, and sprinkle with 1/4 cup cheese.
TOSS tomato slices with flour; arrange one layer of tomato slices over cheese. sprinkle evenly with half of onion, basil, salt, and pepper. Repeat procedure with remaining tomato slices, onion, basil, salt and pepper.
STIR together remaining 1 cup cheese and mustard-mayonnaise blend, and spread over top of pie.
BAKE at 400 degrees for 24 minutes or until lightly browned. Let stand 10 minutes before serving.

LIGHTENED UP FRIED GREEN TOMATOES (makes about 20)
4 medium size green tomatoes
1/2 tsp salt
1/2 tsp pepper
1 cup self-rising white cornmeal mix
1/2 cup panko (Japanese breadcrumbs)
1/2 cup all-purpose flour
4 egg whites
3 Tbsp olive oil
1. Cut tomatoes into 1/2 in. thick slices; sprinkle with salt and pepper. Let stand 10 minutes.
2. Combine cornmeal mix and panko in a shallow dish or pie plate. Place flour in a second shallow dish or pie plate. Whisk egg whites in a medium bowl until foamy. Dredge tomato slices in flour, shaking off excess. Dip in egg whites and dredge in cornmeal mixture.
3. Cook half of tomato slices in 1 1/2 Tbsp hot oil in a nonstick skillet over medium heat 4 to 5 minutes on each side or utnil golden brown. season with salt to taste. Place on a wire rack in a jelly-roll pan, and keep warm in a 225 degree oven. Repeat procedure with remaining tomato slices and oil.
Calories 65 per slice; Fat 2.2 G, Carb 9.3 G
I like to serve with one of the following dips: Pepper Jelly sauce, Citrus-Ginger Aioli or Blue Cheese Dill Sauce.

Fresh hard crust french bread
Mix 'maters, bread, and Basil in a bowl...I like my 'maters icy cold for this recipe. Add hard crust bread (my fav is sour dough) in cubes. Dress salad with Olive Oil and then vinegar. Salt and Peppa to taste.
If you have Feta cheese - add it. Yummmy.
