Wonderful article about Chef Joho. I am a big fan of his restaurants and based on our recent experiences in a couple of his restaurants (Everest and Brasserie JO Chicago/Boston) believe he is the best chef in the country.

For a chef of his caliber to be so involved in the customization and hand selection of ingredients speaks volumes about how great his restaurants are. Highly Recommend!
