1) As you go to the table you notice that a glass is dirty, and that customer has already started drinking. What do you do?

2) Food runner brings food to the table and a guest says that the steak he ordered was suppose to be rare cooked and the one he has is well done. What do you do?

1) Dirty with what? That could make a big difference in your reaction. Obviously the glass needs to be replaced regardless. But depending on what it is dirty with would dictate the urgency, like if you need to tell the customer immediately that you are taking their drink to replace the glass. If it's something minor though and can be replaced on a refill without alerting the customer, therefore worrying them, I would take that route.

2) Replace it ASAP!

1.After the customer finish drinking, replace the glass with a new glass of water.
2.Apologize to the customer and inform hom/her that you will correct their order immediately and apologize again for the inconvenience.

Are you KIDDING? The guest is always correct.
1) Replace the glass and drink immediately, as it should have come out (i.e., if their martini is gone and they just mentioned it, give it another one. Forget about anything else----get it done ASAP.) And pay more attention to details and make sure it doesn't happen again, if you can help it.
2) If their steak is not cooked to their liking, replace it ASAP. Get a manager and have them drop it off to make sure they're happy. Have a manager comp it if they feel the situation calls for it.
