Can employees skip a lunch break?

Our organization has several hourly employees with a work schedule of 9am-5:30pm, this includes a 30 minute lunch break (unpaid). Can we allow employees to skip their lunch break and leave 30 minutes early? This would be their choice, we would never not give them the option of taking a lunch break. We were told that employees must take a lunch break, but I would like to confirm the advice we were given. I realize the law varies by state but I was specifically looking for advice in New Jersey. Thank you very much!
