2005 grand caravan overheating

my van has been running hot and blowing cold air despite the temperature gage on the dashboard is showing overheating. I am thinking it is the thermostat, but I want to get others opinion. After the initial travel after it redlines, I open the hood and there is coolant under the hood. The temperature outside has been below 44C. I plug in the van at night but the temperature climbs to the redline after traveling a few kilometers. When I stop to let the engine cool down, I start it up again and continue driving with the temperature staying around normal operating temperature. I suspect something defrosting enough to allow the engine to run at normal temperature. Does anyone have any thoughts?
