Estella's in Las Vegas. She would serve some of the best food in the state while walking to your table on one crutch. You wanted to jump up and help her.
Estella's food is still good, but they don't give you enough for the prices.

I always leave there still hungry.

Somehow I can't get past that name. It conjurs up a strange image with the first word in the name...
Agreed.

When I was a kid and saw that sign I said, "Sanitary? As opposed to what...Unsanitary Tortilla Factory?"

Why'd they have to say sanitary?

I know it may not be considered fine cuisine, but I always liked Stuffy's stuffed sopapillas. Does anybody remember Taco Sal's by Eubank & Menaul?

Especially the Carne Adovada ones. Lots of grease but oh so good.

Taco Sal is still there (or least last Thursday).

I am surprised nobody has mentioned M&M cafe. They were outstanding and always busy in the South Valley and moved to the Highland area. Bad move because they just withered away then.

And while it is not true Mexican food but because it did originate in New Mexico, how about the Indian fried bread at the Indian Cultural Center on 12th street?

Mouth watering Navajo Tacos.

They had the best masa that you could buy for tamales.

I used to eat there probably 20 years ago or so and then they went downhill. A friend of mine said that it is very good now so I must go back and check it out again.

I was doing consulting work down on 1st street south of El Modelo and we used to go there to takeout a burrito or sandwich. This would have been about 1975. I loved the grocery(?) shelves they had behind the counter with the Kellog's Corn Flake boxes that had to be from the 1950s. But the food was wonderful.

Chope's in La Mesa, NM. I lived there for six years and really miss eating there. It was about a mile from my house. Hot green enchiladas and rellenos are still on my mind.
