WHEN it comes to Korean cuisine, I've always needed a bit of convincing. Apart from the alien concept of having scores of side dishes to choose from, the ingredients can run the whole gamut of extremes-either the textures appear banal and uninteresting or the flavors appear too intense and are mixed in a rather bold and cumbersome way.
